UH, beets ?
Recently, I cannot get enough of these magenta beauties. Beets are in my salads, juices, and soup (Borscht) has me turning in circles. Not only are these great multi-seasonal foods, but here are some quick facts from the nutritionist.

If you ask me…I think we all need beets in our lives. If you want an easy way to add this to your meals start with a nice beet salad.
- 2 handful of
- roasted beets (1 bunch)
- cup of walnuts
- sprinkle of feta cheese
- chick peas (drained from can or freshly soaked)
- cucumber slices
- sesame oil with fresh ginger
- rosemary , salt , and pepper to your liking
